Turin Legato V2 Espresso Machine with Dual PID and 58mm Portafilter

The Turin Legato V2 is a compact home espresso machine built around a 550ml stainless steel brew boiler and a separate steam thermoblock. This hybrid design provides temperature-controlled brewing and quick access to steam without the footprint or price of a large E61 machine. A standard 58mm portafilter, adjustable OPV, dual PID settings and programmable pre-infusion make the V2 unusually flexible for its class.

Version 2 adds the controls buyers asked for: an externally adjustable OPV control screw, independent brew and steam temperature settings, and adjustable pre-infusion time and delay. Stainless steel, black and white finishes are offered as current inventory allows.

Why Choose the Legato V2?

Brew boiler plus steam thermoblock

The 550ml brew boiler provides a stable reservoir for espresso water, while the separate thermoblock heats for milk steaming. You do not need to switch a single boiler from brew temperature to steam temperature.

Dual PID settings

Set the brew and steam systems independently. Brew temperature can be matched to different coffees, while steam adjustment lets you tailor milk-texturing performance.

Adjustable OPV and pre-infusion

V2 provides an accessible OPV adjustment plus programmable pre-infusion time and delay. These are useful tuning tools, but they do not replace a correct grind, dose and puck preparation.

Standard 58mm ecosystem

The stainless 58mm portafilter format accepts a wide range of baskets, tampers, puck screens and preparation accessories commonly used on prosumer machines.

Fast, compact routine

The listed warm-up is about five minutes, and the narrow 8.75-inch body fits counters where a full-size E61 machine may be difficult.

How to Dial In the Legato V2

Begin with the factory pressure setting and a simple recipe. Weigh the coffee dose, distribute evenly, tamp level and weigh espresso yield. If the shot flows too quickly, grind finer; if it barely flows, grind coarser. Only after grind is close should you experiment with temperature, pre-infusion or OPV settings.

Pressure adjustment changes the machine’s ceiling, but the puck creates resistance. Do not use the OPV to compensate for an unsuitable grinder or uneven preparation. For milk, purge condensation, introduce air near the surface, then roll the milk until glossy. Wipe and purge the wand immediately afterward.

Legato V2 vs Gallatin V vs Gallatin DB

The Legato V2 is intended for buyers who want a compact 58mm machine with useful temperature and pre-infusion controls at an accessible price. The Gallatin machines add the thermal mass and milk-drink workflow of an E61 prosumer platform, but they require more counter space, warm-up time and investment.

Buying factor Legato V2 Gallatin V Gallatin DB
Heating 550ml brew boiler + steam thermoblock 2 L heat-exchange boiler Independent 1 L brew and 1 L steam boilers
Group and portafilter Compact group with standard 58mm portafilter 58mm E61 lever group 58mm E61 lever group with flow control
Pump Vibration Vibration Rotary
Counter space 8.75 inches wide; easiest fit Larger prosumer footprint Larger prosumer footprint
Warm-up style Compact system reaches operating condition sooner E61 group needs thorough heat saturation E61 group and dual boilers need thorough heat saturation
Best fit Compact value, espresso experimentation and moderate milk use Classic E61 workflow and frequent milk drinks Independent temperature control, rotary-pump quietness and flow profiling
Main tradeoff Less steam reserve and thermal mass than the Gallatin machines HX temperature management and longer warm-up Higher cost and larger footprint

Which machine should you choose?

Choose the Legato V2 if compact dimensions and value are the priorities and you want a capable 58mm home machine without moving to a full-size E61 platform.

Choose the Gallatin V if you regularly prepare milk drinks and want a classic lever-operated E61 heat-exchange machine.

Choose the Gallatin DB if you want independent boiler temperatures, a rotary pump and manual flow profiling.

Frequently Asked Questions

What changed on the Legato V2?

V2 adds an adjustable OPV control screw, independent PID settings for brew and steam, and adjustable pre-infusion time and delay.

Is it a dual boiler machine?

No. It combines a 550ml brew boiler with a separate steam thermoblock. The heating systems can be set independently, but they are not two conventional boilers.

Can it brew and steam at the same time?

The separate systems avoid changing one boiler between brew and steam temperatures. Follow the manual’s operating sequence for the best workflow.

How quickly does it warm up?

The listed rapid-heating time is about five minutes. Allow the portafilter and cup to warm as well.

Does it use a 58mm portafilter?

Yes. It uses a 58mm stainless steel portafilter and includes single and double baskets.

What is the adjustable OPV for?

The over-pressure valve limits pump pressure. Make small, informed adjustments only after grind and puck preparation are consistent.

Can I program pre-infusion?

Yes. V2 allows adjustment of pre-infusion time and the delay that follows it.

How large is the water tank?

The removable reservoir holds approximately 1.7 liters.

Is a grinder included?

No. Use an espresso-capable grinder with sufficiently fine adjustment.

Which colors are available?

Current stainless, black and white availability is shown in the product selector.

What warranty is included?

A one-year Espresso Outlet warranty and support apply to Legato V2 units purchased from Espresso Outlet.

Is this the U.S. version?

Yes. This is the 120V, 1500W version and ships to U.S. addresses only.
